Obesity has become an epidemic that is impacting health and well being of much of the US population. By 2020 the CDC reported that 70% of US adults were overweight, of which 42% had obesity. Obesity is up from 30% in 2000. Obesity is now affecting 20% of children in the US. How did this health care emergency happen? Increases in average body weight in the US accelerated with the cultural changes in the 1970s and 80s. But its roots go back to changes in what and how Americans ate that started in the late 19th Century. This course will show why up to the 1970s and 80s there was a gradual increase in the average body weight of Americans. Finally, it will explain the cultural changes in the 1970s and 80s caused the more rapid body weight increases that led to the current epidemic.
