This course is the second in a series of courses that explore how American foods and how they were prepared evolved effecting average body weights. The first four decades after World War II resulted in massive changes in American culture around eating enabled by increased food production and new food packaging, meal preparation and marketing methods. The course includes three periods: 1) The 1950s; 2) The 1960s; and 3) The 1970s and 1980s when the percentage of American who were overweight started to accelerate. We will focus on recipes from these periods that are appropriate for seniors today. Students are encouraged to share memories, recipes and share foods from these decades in the classroom.
