About 1890 the average body weight of adult Americans started gradually Increasing. This course is the first two courses that explore what foods were eaten, how they were prepared, when and where they were eaten during the next 100 years. This first course includes three periods: 1) from 1890 up to the Great Depression; 2) during the Great Depression, 3) during World War II. We will focus on recipes from these periods that are appropriate for seniors today. Students are encouraged to share memories, recipes and share foods from these decades in the classroom.
