Today, chocolate is a multi-billion-dollar global industry. This course will include a lecture from one of The Great Courses: Food, Science, and the Human Body, by Professor Alyssa Crittenden at the University of Nevada, Las Vegas. She will take you back in time, so you can follow the trek of chocolate around the world. In addition she will cover its chemical properties and health benefits, as well as its role in the current global market in the form of powerful chocolate-based commercial empires. Bob Holloran will conduct another of his tastings of the chocolate beans, nibs, powder, along with chocolate bars with a range of cacao percentages.He will also share some of his chocolate recipes.
